Saag, or palak, dishes are spiced purees of spinach or other greens common in northern India.
1 Tbs Onion, chopped
1 clove Garlic, minced
1/4 tsp Ground ginger
1/2 tsp Coriander, ground
1/8 tsp Turmeric
1/8 tsp Cayenne pepper (optional)
1/4 lb Spinach, chopped
1/4 cup Water
Salt to taste
- Heat a little water in a large pot or saucepan over medium flame. Add the onions and sauté until translucent. Add the garlic, ginger and spices.
- Stir in the spinach, water and salt. Cook spinach until soft.
- Remove from heat, allow to cool a bit. Then use a blender or food processor to puree.
