Recipe: Saag Indian Spinach

Saag, or palak, dishes are spiced purees of spinach or other greens common in northern India.

1 Tbs Onion, chopped
1 clove Garlic, minced
1/4 tsp Ground ginger
1/2 tsp Coriander, ground
1/8 tsp Turmeric
1/8 tsp Cayenne pepper (optional)
1/4 lb Spinach, chopped
1/4 cup Water
Salt to taste

  1. Heat a little water in a large pot or saucepan over medium flame. Add the onions and sauté until translucent. Add the garlic, ginger and spices.
  2. Stir in the spinach, water and salt. Cook spinach until soft.
  3. Remove from heat, allow to cool a bit. Then use a blender or food processor to puree.
